Many of us work with recipes regularly. Some of us might find them to be a little basic and boring. This blog reminds me that even the most basic of information can be delivered in a delightful and inspiring way.

Chicken Breasts with Balsamic Vinegar and Garlic

I made dinner. It was yummy.

Chicken Breasts with Balsamic Vinegar and Garlic
(this makes 2 small servings)

  • 1 skinless, boneless chicken breast, cut in half 
  • some  flour for dredging seasoned with salt and pepper
  • 1 tablespoon olive oil
  • minced garlic, to your liking
  • 2 tablespoons balsamic vinegar
  • 1/4 cup chicken broth
  • a pinch of dried thyme
  • a sliver of butter

1. dredge the chicken in the flour, salt and pepper. Heat oil in a skillet over medium high heat and saute the chicken until it is nicely browned on one side (about 3 minutes).

2.  Add the garlic. Turn the chicken breasts and continue frying. Cook for about 3 minutes, then add the vinegar, broth, and thyme. Cover and simmer over medium low heat for 10 minutes.

3. Transfer the chicken to a plate and set aside. Swirl in the butter and continue simmering the sauce, uncovered, over medium high heat for a few minutes. Pour over chicken.

Served with grand biscuits and steamed veggies.
